Lake Oconee























Fish Stew
Ingredients:
4 Bass about a pound to pound and a half each—8 skinless filets.
6 Tbsp Olive Oil
I chopped onion
2 large garlic cloves, chopped
3-4 tomatoes, chopped
3-4 carrots, chopped
3 celery sticks hearts, chopped
32 oz broth ( i used chicken, but can use vegetable too)
seasonings: Parsley oregano, salt, pepper to taste

Method
Heat olive oil in large pot over medium heat. Add chopped onion and garlic and saute 4 minutes. Add parsley and stir 2 minutes. Add broth, tomatoes and other veggies. Bring to boil until veggies are almost cooked through.
Add fish and simmer until fish is cooked through (about 10 minutes). add other seasoning. Salt to taste.
